Summery Spinach Pesto

Ingredients
  • 2 cups spinach
  • 2 cups basil
  • 3 cloves of garlic
  • 1/2 cup parmesan cheese
  • 1/3 cup pine nuts
  • 1 lemon (juiced and zested)
  • 1/4 cup olive oil (extra virgin)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Directions
  1. Wash and de-stem your basil and spinach.
  2. Add the greens and all other ingredients except the olive oil to the bowl of your food processor. Pulse a few times and then with the motor running stream in your oil.
  3. Bring a large pot of salted water to a boil and add in your pasta of choice. I used fiber gourmet in this recipe.
  4. Drain the pasta reserving 1/4 cup of pasta water and toss hot pasta with pesto and the reserved pasta water. Adjust salt and pepper to taste, top with chili flakes and more parmesan.
