Shkmeruli, roasted chicken with garlic

Ingredients
  • 1 Cornish hen
  • 10 garlic cloves
  • 1 teaspoon fresh or dry thyme
  • 1 cup milk or half&half
  • 1/2 teaspoon dried coriander
  • salt, pepper, chilli flakes, to taste
  • 2 tablespoons butter or oil
Directions
  1. Clean the chicken, pat it dry, and place it breast side up on a cutting board. With a sharp knife, cut the breastbone out, open the bird all the way, and lay the chicken flat. Pat it dry well and season with the salt and pepper.
  2. Heat the skillet, add oil or butter and roast the chicken over medium heat for about 15 minutes on each side.
  3. Remove the chicken from the skillet, add garlic and cook on medium low heat for few minutes until it gets soft and lightly change the color.
  4. Cut up the chicken, add milk to the skillet and place the chicken pieces in the sauce, add thyme, coriander, chili flakes, let it boil, turn the heat down and simmer for 10 minutes until the chicken is fully cooked.
