Rice Porridge Recipe With Flavorful Pork Meatballs

Thai rice porridge flavored with ginger, soy sauce and spring onions, then topped with super flavorful pork meatballs.

Thai rice porridge, known as Jok (and pronounced joke) in Thailand, is a breakfast dish that is commonly served with pork or chicken meatballs.

I absolutely fell in love with it when I was in Thailand, and I wanted to make it at home too, so after many experiments I was able to create the perfect rice porridge for me.

Ingredients
  • For the Rice Porridge
  • 200 grams Jasmine Rice
  • 1.5 liters Vegetable Broth
  • 2 Garlics, chopped
  • 1 piece chopped ginger
  • 2 Spring Onions
  • 3 tablespoons Soy Sauce
  • Salt & Pepper
  • For the Meatballs
  • 400 grams Minced pork
  • 1 Chopped Garlic
  • A small piece of chopped ginger
  • 2 tablespoons Soy Sauce
  • Salt & Pepper
Directions
  1. For the pork meatballs, add all ingredients to a large bowl and mix together.
  2. Form into balls (just 1/2 inch in diameter, approximately) and store in the refrigerator.
  3. Place the rice in a pot; add enough water to cover the rice. Shake the water in the pot to rinse the rice and drain. Repeat the rinsing process until the rice water is clean, about 6 to 8 times. Add 3 cups of water to the drained rice in the pot with a lid and cook the rice for 12 min.
  4. Meanwhile in another pot, put the broth to heat.
  5. When the broth is hot (it should not boil), add the pork meatballs, garlic, ginger and soy sauce. Let the meatballs cook in the broth for about 4 minutes.
  6. At this point you can add the rice to the broth with the meatballs and arrange with salt.
  7. Let it cook together for about 10 minutes or longer if you prefer a creamier consistency.
