Who could say no to any grilled, caramelized fruit—especially during the spring and summer months? In this ultra-refreshing spritzer, grilled season-ripe peaches are the star; the charred fruit becomes the base for a smoky-sweet nectar and lemon seltzer brings the bubbles. While the recipe proportions are just for one drink, there will be enough peach puree to make a couple batches. I kept the recipe non-alcoholic, though two ounces of vodka or sparkling wine would certainly be welcome here.

I highly recommend using lemon seltzer water as the base for this spritzer since it adds a crisp and lightly citrusy taste to the drink. But if you can only find plain seltzer water, don’t worry; just squeeze a little fresh lemon juice in there to get the same effect. Serve this spritzer with a bundle of fresh mint and some big, beautiful ice cubes—like the Craft Ice™ made by the LG STUDIO InstaView® Refrigerator—and you’ll be sipping pretty.

Ingredients
  • 2 medium yellow peaches (about 6 ounces each), sliced into wedges
  • 1/4 cup (about 55 grams) packed brown sugar
  • 4 ounces lemon seltzer water
  • 6 large fresh mint leaves, plus more for garnish
Directions
  1. Heat a large nonstick skillet over medium high-heat and add your sliced peach wedges to the pan. Sear both sides for about 2 to 3 minutes each, until nicely charred and dark brown. Reserve a few pieces of the charred peaches for your garnish and transfer the remaining peaches to a food processor.
  2. Add brown sugar to the food processor with the charred peaches, and puree until smooth, about 1 minute.
  3. Assemble the drink: Smack the mint leaves in between your hands to release the aromatic oils, then add them to the serving glass.
  4. Fill three-quarters of the glass with ice (like Craft Ice™ from the LG STUDIO InstaView® Refrigerator). Add 3 ounces of the charred peach puree and top off with lemon seltzer water. Stir well until the peach puree is fully incorporated. Garnish the glass with a mint sprig and a slice of charred peach.
