Classic oatmeal crumb bars with a filling of bananas, peanut butter, and chocolate chips! These are super simple to make, and they're perfect for when you have an extra, ripe banana laying around that you can't seem to find a use for :) I came up with this recipe when I felt like baking but didn't want to go to the store to buy any new ingredients, so I just picked from what I already had in the pantry! (Oatmeal crumb base adapted from Quaker's typical crumb base to be vegan and gluten free!) —Vegan Baker

Ingredients

very ripe banana

1/2 cup
peanut butter (I prefer crunchy, but smooth works too!)

1/2 cup
chocolate chips (add more if you want!)

3 teaspoons
cinnamon - divided

2 cups
gluten-free 1-to-1 flour blend (or any other flour you choose!) - divided

1 1/2 cups
oats (quick, rolled, or old fashioned)

1 cup
vegan butter, softened

1 cup
firmly packed brown sugar
Directions

Preheat oven to 375° F.

In a medium bowl, mash banana and whisk in peanut butter until mixed.

Add in half of the cinnamon and 1/4 c gf flour and stir until there is a consistent mixture. Stir in chocolate chips.

In a large bowl, beat the vegan butter and brown sugar until creamy. Add in oats and the remaining gf flour and cinnamon.

Set aside 3/4 c of oat mixture for topping. Press remaining oat mixture onto the bottom of a 13 x 9 in non-stick baking pan.

Bake for 12 to 15 mins, or until golden brown.

Spread banana mixture over oat base within 1/2 in from the edges. Sprinkle the set-aside oat mixture evenly over the banana mixture.

Bake 16 to 22 minutes or until golden brown. Let cool completely. Cut into bars. Enjoy!
