Jelly Berries Elderflower Cups

Fresh, seasonal and ripe fruit are a dessert themselves. Nothing beats the sugary taste of biting into a super sweet strawberry and you thinking to yourself “that was a good batch!”

For this recipe I just put together in a bowl all the fruits that scream summer to me: strawberries, raspberries and blueberries.

Don’t make the error to think that the clear jelly that keeps all together is “just” jelly. I wanted to make it special by adding fizzy elderflower and a hint of lime.
When you spoon into the fruit jelly you get the floral but very subtle scent of the elderflower, where I added a bit of sugar (not much, as fresh and seasonal fruit have this already) and the fresh squeezed lime provides contrast to the sweetness of the summer cups

It is a very simple and refreshing recipe, for those days where it is too hot to turn the oven on but still like to enjoy a dessert.

Ingredients
  • 600 grams Fresh Berries (strawberries, raspberries, blueberries)
  • 12 grams Gelatine
  • 400 milliliters Elderflower
  • 40 grams sugar
  • 1/2 Fresh lime
Directions
  1. Simmer half of the elderflower in a pan, add the gelatine, sugar and lime until everything has dissolved. Pour the rest of the elderflower, mix and set aside to cool down.
  2. In the meantime fill your glasses with the berry mix and pour the liquid until completely covered. Place in the fridge overnight to settle.
