Isn’t it wonderfully crazy how the smell of a specific meal makes you smile. This is one of those meals for me and maybe it’s also one for you! Every year on thanksgiving my grandmother or mother would make marshmallow covered sweet potato casserole and I’m going to be honest when I was younger I would pick the marshmallows off the sweet potato and my mom would eat the sweet potato part and if that’s not love I don’t know what it 😂 anyway as time went on I found a love for cooking and when my older sister decided to go vegan( I’m from a vegetarian family but she need to one up us all and go fully in 😂) I took the recipe and changed it up just a bit so she would never have a thanksgiving without it that’s how this dish uses love as an ingredient and as a symbol that we adapt and change as the people we love do the same. I have also added a crumble recipe incase you are not a fan of marshmallow the parts for that are underneath the marshmallow. This recipe is loosely adapted from it doesn't taste like chickens —Mfp

Ingredients

medium sweet potato or yams

1/4 cup
non dairy butter( I used Earth Balance)

1/2 cup
dairy free milk( i used planet oat original but any milk would do I suggest it be either oat,soy or almond as they only enhance the flavor other milks may add an unwanted after taste)

1/3 cup
dark brown sugar( can be replaced with maple also agave,monk fruit or any other sweetener but I have only tried maple and brown sugar so I do not know how the other subs would work)

1 tablespoon
cinnamon( Note: I dont measure spices just add till it taste right so these are all estimates)

1 tablespoon
nutmeg

1 tablespoon
apple pie spice

2 cups
vegan marshmallow( I use Dandies but any would do if it does not state it is vegan then it contains real gelatin a product made from animal fat)

2 cups
all purpose flour( any GF alt should work)

2 cups
brown sugar

1 cup
oats

1/2 cup
non dairy butter
Directions

preheat oven to 350 make sure there are no items in the oven I seem to always forget a pan in there

boil water in a large pot
-
peel the potatoes( leave some skin on or all on however you enjoy them) and cut into small/medium pieces. add to boiling water

once you can easily stick a fork through a few pieces drain the water and add the potatoes back into the pot and smash them up till they look liked mashed potatoes( because they are!)

add cold vegan butter do not worry it will melt in the mash

add non dairy milk and mix

add Brown sugar or whatever sweetener you want and add the spices till it reaches a desired taste

mix again then add into a ceramic baking dish flattening it out so it fits the dish

throw the marshmallow or crumble( add flour and sugar into a bowl then add the vegan butter and use your hands to molk it together and breaking it apart creating a crumbling)

back for 30 minutes or until top is golden brown
