Sweet Potato Meringue Pie

Sweet Potato Casserole is a dish my Mom always made with the marshmallows every Holiday. I wanted to try something like that but a pie! So we have sweet potato meringue pie it's everything you want for Thanksgiving! —Tiffany Audia

Ingredients
  • Sweet potato filling
  • 3 Sweet potato , peel and boil them
  • 1/2 cup Butter
  • 1/4 cup Milk or coffee creamer ( like vanilla )
  • 2 tablespoons All purpose flour
  • 2 Eggs
  • 1/2 cup Brown sugar
  • 1-1/2 tablespoons Pumpkin Pie Spice
  • Dash of salt
  • 1 tablespoon Vanilla
  • 1 Premade pie crust
  • Meringue Topping
  • 1-2: tablespoons Cream of tarter
  • 3 Egg whites
  • 1/2 cup Sugar
Directions
  1. Sweet potato filling
  2. Peel, wash , and boil potatoes
  3. Mix all ingredients for filling and pour in premade pie crust
  4. Bake 350 about 35 - 40 mins until it doesn't wiggle in middle
  1. Meringue Topping
  2. To make meringue add 3 egg whites and whip about 3 mins
  3. Add sugar and mix more
  4. Add cream of tarter this will start to thicken it and make fluffy if you have a hard time making fluffy just add more cream of tarter until thick creamy and smooth.
  5. Add on top of pie . Continue to bake 10-15 mins until golden brown
  6. Let rest an hour at least before put in fridge or meringue will get flat.
