Chipotle simple syrup and smooth Patrón Reposado bring a smoky tequila twist to the classic Moscow Mule. Finished with aromatic lime zest on the rim, this sip is a winter favorite of singer-songwriter Amber Mark. If you want your drink with a bit more spice and a little less smoke, swap the dried chipotles for the same amount of morita chiles (another type of chipotle pepper made from fully ripened jalapeños).

Ingredients
  • For the cocktail:
  • 1 1/2 ounces Patrón Reposado
  • 1/2 ounce freshly squeezed lime juice
  • 1/4 ounce chipotle syrup
  • Ginger beer
  • 2-inch-wide strip lime peel, for garnish
  • For the chipotle syrup:
  • 2 dried chipotles
  • 1/2 cup sugar
  • 1/2 cup water
Directions
  1. For the cocktail:
  2. Combine the tequila, lime juice, and chipotle syrup in an ice-filled cocktail shaker. Shake to combine (about 20 to 30 seconds), then strain into a highball glass with fresh ice. Top with ginger beer.
  3. For garnish, hold a 2-inch-wide strip of lime peel with the outside of the peel facing the glass. Hold a lighter just in front of the peel and warm for 10 seconds, then quickly squeeze the peel to release the oils. Run peel around the edge of the glass and serve.
  1. For the chipotle syrup:
  2. Add all ingredients to a small saucepan. Heat until almost boiling, stirring to dissolve the sugar. Remove from heat, cool completely, and strain. Store in the fridge for up to 2 weeks.
