Welcome to a recipe for alchemical liquid gold - a cooking component inspired by pomegranate molasses. It is brilliantly tart with just enough sweetness and bitterness to delight anyone's taste buds. If you happen to have a bulk of zested lemons remaining from a foray into home-made limoncello, forget the lemonade and make this. Scale up or down - I used a ratio of 1 part sugar to 5 parts juice by weight. —salt

lemon juice, freshly squeezed

granulated sugar
Directions

Combine juice and sugar in a small pot over medium heat. Stir to dissolve sugar. Bring to a simmer.

Simmer uncovered over medium-low heat for 1-1.5 hours, until the overall content is reduced to about one-third it's original amount. Be careful not to reduce it too much -- you're looking for molasses consistency, not hard candy.

Take off heat and put into a container. It is shelf stable due to the high sugar content. You can refrigerate it, but it may crystallize. If this happens, gently reheat it.
