Ingredients
  • 1 pound Double 8 Cattle Company Fullblood Wagyu Sweet Italian Sausage (4 links)
  • 1/4 cup Marinara Sauce
  • 6-10 SLICES Pepperoni
  • 3/4 cup Shredded Mozzarella Cheese
  • Red Pepper Flakes (season to taste)
Directions
  1. Tools - Cutting Board, Grill or Outdoor Propane Burner, Cast Iron Griddle (if using propane burner), 3 Skewers, Tongs, Basting Brush, Baking Tray, Carving Knife
  2. FIRST STEP Take the Fullblood Wagyu beef sweet Italian sausage out of the freezer, and place it in the refrigerator 24 hours before starting this recipe
  3. PREPARING THE SKEWERS Place the cast iron griddle over an outdoor propane burner, and turn the heat to medium-high. NOTE: If using a grill, preheat to the high heat setting instead, and continue with the following steps. Meanwhile, tightly pack the 4 Wagyu beef sausage links against each other (similar to how they come in the package). Insert a skewer through the middle of each Wagyu beef sausage link, so that all 4 links are held tightly together. Repeat this process two more times, going down the left side of the links and then the right side of the links. This results in 3 skewers holding the 4 Wagyu beef sweet Italian sausage links tightly together, side-by-side. Once the griddle begins to smoke, place the Wagyu beef sausage skewer on the griddle. After 5 minutes (or once the sausages begin to brown), take the skewer off of the grill. Place the Wagyu beef sausage skewer on a baking tray with the cooked side facing up. Add the marinara sauce on top of the skewer, brushing the sauce evenly across the Wagyu beef sausages. Next, layer the skewer with the shredded cheese, pepperoni slices, and additional shredded cheese. Sprinkle with red pepper flakes as desired. Place the pepperoni pizza and Wagyu beef sausage skewers back on the griddle (over the propane burner), and continue cooking. After about 5-7 minutes, once the cheese has melted, turn off the burner. Transfer the skewer to a cutting board.
  4. FINAL STEPS Using a carving knife, slice the pepperoni pizza and Wagyu beef sausage skewer twice - first between the left and middle skewers and secondly between the middle and right skewers. This will give you 3 separate pepperoni pizza and Wagyu beef sausage skewers. Place the skewers on a plate, serve, and enjoy!
