After a chocolate, pork filled, pie induced holiday season my body is longing for something simple and not all fussed up. Containing only three ingredients this apple salad is perfect for the simple pleasures we all crave. Feel free to substitute the meyer lemon for any other type of citrus such as an tangerine, lime, or regular lemon. —Momona

Ingredients
  • 1 apple
  • 1/2 meyer lemon
  • 1 pinch of salt
Directions
  1. Wash and cut apple into bite size pieces, removing skin before hand if desired.
  2. zest some of meyer lemon. Cut meyer lemon in half (saving the other half for future simplistic apple salads) and juice half of meyer lemon onto the apple.
  3. Add a pinch of salt.
  4. Toss.
  5. Enjoy.
