Maple Bourbon Candied Yams
Ingredients
  • 6 medium yams or sweet potatoes, peeled and cut crosswise into ½-inch-thick slices
  • 8 tablespoons unsalted butter
  • 1 cup (packed) brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon finely grated orange zest
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground ginger
  • 1/4 cup bourbon
  • 1 tablespoon pure vanilla extract
Directions
  1. Heat the oven to 350°F. Place the yams in a 13 x 9-inch baking dish.
  2. In a medium saucepan over medium heat, melt the butter. Add the brown sugar, syrup, orange zest, cinnamon, nutmeg, salt, and ginger and stir to combine.
  3. Add the bourbon and flambé until the alcohol is cooked off, about 30 seconds. Stir in the vanilla.
  4. Pour the bourbon mixture over the yams, tossing to coat. Cover the baking dish with foil. Bake for 30 minutes. Baste the yams with the bourbon mixture, then cover and continue to bake for 15 to 20 minutes more, until softened and fork-tender. Let cool for about 10 minutes before serving.
