Easy banana bread style peanut bars with a layer of raspberry jam between for an easy and vegan snack when you need to satisfy that sweet tooth. —Sylvie Taylor @ Roamingtaste

Ingredients
  • 3 medium bananas, peeled
  • 1 1/2 cups
    1/3 cup rolled oats


  • 1/2 cup peanut butter
  • 1/2 cup roasted peanuts
  • 1/3 cup cups raspberry jam
Directions
  1. Preheat oven to 180C/350 and line a baking tin with greaseproof paper.
  2. Place the bananas into your bowl and mash until fine.
  3. Add in the 135 grams / 1 1/2 cups rolled oats, peanut butter and roasted peanuts to your bowl and stir until fully combined and no dry portions remain in your bowl.
  4. Spoon 2/3’s of the batter into your tin and spread out evenly.
  5. Place in the oven to bake for 10 minutes.
  6. Remove and spread over the raspberry jam evenly.
  7. Add the remaining 30 grams / 1/3 cup rolled oats to the batter and stir to combine until it resembles a rough crumb mixture.
  8. Take spoonfuls of the dough and drop on top of the jam, leaving gaps here for the jam filling to peek through.
  9. Bake for 20 minutes or until lightly golden.
  10. Allow to cool fully before removing and slicing evenly.
  11. Dig in!
