This is a nice light food usually for summer that is cooked with peppers, mainly red ones.

A') INGREDIENTS
-Six red peppers
-White grained cheese
-Three tablespoonful olive oil
-One onion
-1 bunch or half bunch of mint
-Oreganon
-Some salt and some light pepper

B) PREPARATION
-We wash the peppers well, and remove the cap
-We blend white cheese,
-We cut the onion into tiny pieces
-We cut the mint to very small pieces
-Then we fill each pepper with the proportional dose of mix
-We put in a flat plate the blended, grained (white) cheese
We add the olive oil
-We add the cut onion and mint
-We mix well
-We add salt, (if white cheese is not salty of course, if yes, we only need to put less salt
-We add the oreganon and we mix accordingly

We pour some olive oil over peppers, and we put all of them in a flat big plate of glass, then bake them in the oven, for round 30 min-45 min, checking this, and temperature of stove, we check baking so that better peppers don't get 'too' crusty, remain as fresh as possible, baked though in oven.
The food is served with cold beer,
