Ingredients
  • Cake
  • 322 grams all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons dry milk powder
  • 1 teaspoon salt
  • 312 grams granulated sugar
  • 3 large eggs
  • 102 grams vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • Zest of a lime
  • Zest of a lemon
  • Zest of a grapefruit
  • Zest of an orange
  • 220 grams plain yogurt or sour cream
  • Fresh mint leaves, for garnish
  • Sweet Yogurt Glaze
  • 1 cup powdered sugar
  • 2 tablespoons plain yogurt
  • 1 teaspoon vanilla extract
Directions
  1. Cake
  2. Preheat the oven to 325 degrees Fahrenheit and line the bottom of a loaf pan with parchment paper. Lightly spray the pan with nonstick spray.
  3. In a large bowl, whisk together the dry ingredients from the flour to the salt.
  4. In a medium bowl, whisk together the wet ingredients from the sugar to the zests. Stir into the dry ingredients.
  5. Stir the yogurt into the batter and mix until just combined.
  6. Pour the batter into the prepared loaf pan and bake until a cake tester comes out clean- between 30 and 40 minutes.
  7. Let rest in the pan until mostly cooled and move to a cooling rack. Once fully cooled, top with the sweet yogurt glaze and garnish with mint leaves.
