Author Notes
The use of Caribbean spices was a common feature across Don Beach’s catalogue. Many now consider this the defining aspect of tiki recipes. This one includes two forms of spice—cinnamon syrup, as well as Don’s Spices (equal parts vanilla and allspice). As for the rum, a light-aged Hawaiian agricole rhum is a fun twist, though you can use two ounces of any high quality rum you have at home.

Ingredients

2 ounces
Lightly Aged Hawaiian Agricole Rhum

½ ounces
Fresh Squeezed Lime Juice

½ ounces
Fresh Squeezed Orange Juice

¼ ounces
Cinnamon Syrup (2-1)

¼ ounces
Don’s Spices #2 (see note)

2 dashes
Angostura Bitters
Directions

Shake all the ingredients with ice, then strain into a collins glass. Fill the glass with crushed ice. Garnish with an orange peel rosette and serve with a straw.

Note — to make Don’s Spices #2, combine equal parts allspice liqueur (try St. Elizabeth) and vanilla liqueur (try Giffard). You can keep this mixture on your bar cart indefinitely.
