A fool is one of those back-pocket desserts everyone should know how to make. It’s super simple to put together, you can make it well in advance, and it can work for any season using either fresh or frozen fruit. I especially love making it for gatherings like my book club potluck because it’s so easy to scale up or scale down depending on how many friends I have coming over. This version uses luscious sour cream, instead of the more traditional heavy cream, swirled with a quick jam made from frozen strawberries and flavored with orange zest and vanilla. The lightly tart cream balances the sweetness of the berries perfectly. —Samantha Seneviratne

Ingredients

frozen strawberries, thawed

1 cup
confectioners' sugar, divided

2 teaspoons
pure vanilla extract

2 teaspoons
freshly grated orange zest

Daisy Sour Cream

fresh strawberries, diced (for garnish)
Directions

In a large skillet, combine the remaining strawberries and ½ cup confectioners’ sugar over medium heat. Using a potato masher, crush the fruit. Cook, stirring, until the fruit has softened and the juices have thickened slightly, about 5 minutes. Transfer to a bowl, stir in the vanilla and orange zest, then place in fridge to cool completely.

In a large bowl, combine the sour cream, vanilla extract, and the remaining ½ cup confectioner’s sugar. Chill in the fridge until the compote is also cold.

To serve, add the chilled compote to the sour cream mixture and fold a few times to swirl the two together (they shouldn’t be uniformly mixed). Divide between four serving dishes and top with diced strawberries. Serve immediately.
