There’s just something about sprinkles that makes people smile, and I have to admit that while making them yourself is a bit time-consuming and labor-intensive, I swear I was grinning from ear to ear as I showed my husband my first batch, declaring, “Look, I made sprinkles!” If you’ve got a free afternoon, and need some cheering up, try making these and I guarantee you’ll feel better.

Ingredients

Confectioners sugar

Assorted extracts

Food coloring or gel paste
Directions

Line a baking sheet with parchment.

Sift the sugar into a medium bowl, then whisk in the egg white. Slowly add ½ teaspoon of water, stirring to form a sticky paste the consistency of liquid glue or runny toothpaste.

Working with one color/flavor at a time, and keeping the rest of the dough in the bowl covered with a kitchen towel, spoon a generous Tablespoon of dough into a small bowl. Add several drops of extract and corresponding food color and knead with your fingers until the dough is smooth and the color completely incorporated.

Snip off one corner of a plastic snack bag and fit with the piping tip. Pipe the dough into thin parallel lines on the
parchment paper no more than 1/2“ apart.

Repeat five more times for a total of six colors/flavors, leaving one batch untinted. (I like to flavor the white batch with vanilla extract.) Tint the dough a bit darker than you want the final sprinkles to be since the color will fade a bit as the sprinkles dry.

Let the lines dry for 3 to 4 hours, then cut into 1/4” lengths with a sharp knife, then use a spatula to slide the sprinkles off the parchment onto a plate. Let dry overnight then store in an airtight container.
