Lightly Smoked Salmon Spread

I put this together on the fly last week when we were on our way to a dinner invitation with the request to bring along an appetizer. It was so good and everybody raved about it so I made it a keeper and posted it here on Food52 for you to enjoy. —Fab

Ingredients
  • 2 tins Trader Joe's Lightly Smoked Salmon
  • 8 ounces whipped cream cheese, at room temperature
  • 1 medium shallot, finely chopped
  • 1/4 cup chives, finely chopped, plus more for garnish
  • 1 small lemon, zested and juiced
  • 1 teaspoon kosher salt
Directions
  1. Remove salmon from tins to a small bowl. Leave most of the oil in the tin and discard. Using a fork mash the salmon until no chunks remain. Set aside.
  2. Put whipped cream cheese in a medium bowl. Add shallot, ¼ cup chives, lemon zest, and lemon juice. Mix until well combined and all juice has incorporated into the mix.
  3. Add salmon to bowl, fold into cream cheese mixture until well incorporated. Season with 1 teaspoon of kosher salt and mix well.
  4. Spoon spread into a serving bowl, garnish with reserved chives and serve with toasted crostini or crackers of choice.

Very tasty and comes together in a jif! The perfect thing to pack for and whip up on vacation at the beach. Added a couple of tablespoons of chopped capers to add some texture.
