My family and I love breakfast sausage, and usually enjoy making it with a blend of ground pork and seasonings. When I lucked into a particularly good deal on ground turkey, I decided to try out using it instead. several weeks of testing and tweaking led to the following crowd-pleasing recipe, which i hope you'll enjoy as much as we do in breakfast burritos, on top of hash, scrambled with eggs, and even as a pizza topping!
Notes:
- This seasoning blend may be made in advance and kept in an air-tight jar with your other spices for up to 6 months.
- If working with more or less than 3 pounds of ground turkey, use roughly 2 tsp of the seasoning blend per pound.
- Once cooked, this recipe freezes very well and can be preserved in the freezer for up to a year.

Dried Basil

Ground Black Pepper

Bacon Fat (or Cooking Fat of Choice)

Ground Turkey
Directions

Combine all the dry seasonings and corn starch in a small bowl, stirring to combine to an even blend.

Heat a large frying pan over medium heat till the pan is hot, about a minute. Add the cooking fat and swirl in the pan till heated through and starting to shimmer.

Add ground turkey to pan and stir to ensure the meat browns evenly, breaking up any clumps that form while cooking. If your turkey lets off more than tablespoon of water while cooking, use a ladle to remove the excess cooking liquid, reserving it for later use. (Too much water in the pan will encourage the meat to boil or steam, rather than brown.)

Once the meat is fully browned and any clumps are broken up into small pieces, stir the combined seasonings in thoroughly. There should be a light, glossy liquid coating to the ground meat, if it appears dry and crumbly, add back in some of the reserved cooking liquid a teaspoon at a time.

Serve as desired, with omelets, breakfast burritos, egg scrambles and pizza!
