Ingredients
  • Chicken
  • 2 Skin On Chicken quarter - or your favorite piece of roasted chicken
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • Salt and black pepper to taste
  • Salad and Dressing
  • 3 cups Romaine lettuce chopped
  • 1 cup Croutons
  • 1 cup Shaved Parmesan Cheese
  • 1/2 cup Greek Yogurt
  • 1/4 cup Grated parmesan cheese
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Lemon juice
  • 1 teaspoon Worcestershire sauce
Directions
  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken: In a small bowl, mix olive oil, garlic powder, onion powder, dried oregano, salt, and black pepper. Place the chicken breasts on a baking sheet and rub them with the prepared mixture.
  3. Roast the Chicken: Roast the chicken in the preheated oven for about 20-25 minutes or until the internal temperature reaches 165°F (74°C). Allow the chicken to rest briefly before slicing it into thin strips.
  4. Make the Caesar Dressing: In a bowl, whisk together yogurt, grated Parmesan cheese, Dijon mustard, lemon juice, Worcestershire sauce, anchovy paste (if using), minced garlic, salt, and black pepper. Adjust the seasoning to taste.
  5. Assemble the Salad: In a large salad bowl, toss the chopped Romaine lettuce with the Caesar dressing until well coated. Add croutons and shaved or grated Parmesan cheese.
  6. Add the Roasted Chicken: Place the sliced roasted chicken on top of the salad.
  7. Serve: Divide the salad among serving plates and garnish with additional Parmesan if desired.
