Ingredients
  • For the Poached Salmon
  • 4 salmon fillets, skinless
  • 4 cups fish or vegetable broth
  • 1 lemon
  • fresh dill
  • salt and pepper to taste
  • For puree and other sides
  • 2 cups canned peas
  • 1/2 cup fresh mint leaves
  • 2 tablespoons olive oil
  • 1 cup greek yogurt
  • 1 tablespoon lemon juice
  • fresh dill
  • 2 tablespoons mixed seeds (pumpkin seeds and sesame seeds)
  • salt and pepper to taste
Directions
  1. In a large skillet or shallow pan, bring the fish or vegetable broth to a gentle simmer. Add lemon slices and fresh dill. Season the salmon fillets with salt and black pepper and place them in the simmering broth. Poach for about 8-10 minutes or until the salmon is cooked through. Remove the salmon carefully and set aside.
  2. In a blender or food processor, combine thawed peas, fresh mint leaves, olive oil, salt, and black pepper. Blend until smooth. Adjust the seasoning if needed.
  3. In a bowl, mix together Greek yogurt, lemon juice, chopped fresh dill, salt, and black pepper. Whisk until well combined.
  4. In a small pan, heat olive oil over medium heat. Add the mixed seeds and toast them until they become crispy and golden. Season with salt.
  5. Spoon a generous portion of pea puree onto each plate. Place a poached salmon fillet on top of the pea puree. Add a dollop of yogurt mousse on the salmon. Sprinkle the crispy seeds over the yogurt mousse.
  6. Garnish with additional fresh dill or mint leaves. Serve your elegant poached salmon with pea puree, yogurt mousse, and crispy seeds immediately.
