This matcha latte gets its velvety and smooth texture from Planet Oat Barista Lovers Oatmilk and a rich, caramel-like sweetness from tamarind. The tropical fruit comes in many, many forms—here we call for either the paste or concentrate, which we cook down in sugar and water to mellow out its sweet-sour tang. You’ll have a bit of the tamarind syrup left over, which is a good thing. Use it to sweeten and add depth to other teas or even coffee, or just drizzle it into a cup of foamed oatmilk for a warm, sweet treat. —Food52

Ingredients
- For the tamarind syrup:

2 ounces
tamarind paste (or 2 tablespoons tamarind concentrate)

1 cup
water (1/2 cup water if using concentrate)

1 cup
sugar (1/2 cup sugar if using concentrate)

Juice of one lime (optional; this will cut some of the sweetness)
- For the matcha latte:

1 teaspoon
matcha powder

2 tablespoons
hot water

1 tablespoon
tamarind syrup, plus more to drizzle on top and down the side of the glass

Directions
- For the tamarind syrup:

Add tamarind paste or concentrate to a small pot. If your paste comes in a block, slice into equal sized cubes. Cover with ½ to 1 cup water depending on the type of tamarind, adding a little more if necessary to cover and bring to a low boil over medium heat. Add the sugar and continue to cook stirring until sugar is dissolved, and paste has become smooth and liquified, about 1 minute or more, depending on the thickness of your paste.

Continue to cook until the syrup thickens and begins to coat the back of a spoon, knowing it will thicken more as it cools. This can take roughly 7 to 15 minutes depending on the type of tamarind used.

Remove the tamarind syrup from heat and add the lime juice if using. Let cool to room temperature and store covered up to a week in an airtight container.
- For the matcha latte:

Over a medium-sized, heat-proof bowl or measuring glass, sift in the matcha powder. Whisk in the warm water a little at a time until a smooth paste forms. Add about 1 tablespoon tamarind syrup and stir to combine. Divide the matcha tamarind paste between two medium-sized cups. Warm the Planet Oat Barista Lovers Oatmilk in a small pot while whisking to create a foam, or by using a milk frother. Slowly pour the warm oatmilk over the two drinks and top with an extra drizzle of the tamarind syrup to taste. Enjoy!
