Believe it or not, blueberry pizza is an old-school Swedish recipe that you can find in many old cookbooks. It may sound like an odd one, but think of it like a super easy blueberry galette. (And who doesn't want that?)
It’s traditionally made with the same type of sweet yeasted dough you’d use to make cinnamon buns, but to cut down on the active baking time here, I use store-bought pizza dough. You’ll want to serve it with heavy cream (not whipped) to get the real Swedish effect, but honestly, vanilla ice cream or whipped cream would also taste great.

Ingredients

(16-ounce) store-bought pizza dough at room temperature

4 cups
fresh blueberries

1/3 cup
granulated white sugar

2 tablespoons
cornstarch

2 teaspoons
lemon juice

a pinch of Diamond Crystal kosher salt

egg yolk

1 tablespoon
heavy cream plus more for serving

1 tablespoon
demerara sugar
Directions

Preheat the oven to 375ºF and line a rimmed baking sheet with parchment.

On a very lightly floured surface, roll the pizza dough out into a 16x14-inch oval. If the dough keeps pulling in on itself, let it rest for 5 to 10 minutes. Transfer it to the prepared baking sheet, resizing it as best as you can.

In a bowl, stir together blueberries, sugar, cornstarch, lemon juice, and a pinch of salt.

Spread the blueberries out onto the pizza dough, leaving a 2-inch border all around. Fold the borders over the blueberries, keeping the oval shape and pleating and folding the dough as needed. At any folds, press or pinch the dough to adhere; make sure they’re really stuck together because if it unfolds, blueberry liquid will seep out onto the sheet pan.

In a small bowl, whisk together the egg yolk and cream. Brush the sides with egg wash and sprinkle with demerara sugar. Bake until the blueberries have softened and turned into a jam-like consistency, and the pizza dough is golden brown and cooked through, 40 to 45 minutes. (Keep an eye on the crust; if it starts to get too brown, place tin foil along the edges.)

Serve the blueberry pizza with heavy cream drizzled over top.
