Author Notes

Queso Fundido is a classic Mexican appetizer, a warm, gooey cheese dip traditionally served with tortillas. This version adds a savory twist with both chorizo and Smithfield Hometown bacon, creating a deliciously rich flavor profile. The diced serrano and jalapeño peppers give the dish a kick, balanced out by the mild, creamy oaxaca cheese. This queso fundido is perfect for game days or dinner parties. Serve it right from the skillet, accompanied by warm tortillas for dipping. Enjoy it fresh out of the oven for the best texture and flavor!—Jonathan Dillanes

Ingredients
  • 1/2 pack Smithfield Hometown Bacon, diced
  • 4 ounces chorizo
  • 1/2 onion, diced
  • 1 jalapeño pepper, diced
  • 1 tomato, diced
  • 20 ounces Oaxaca cheese, shredded
  • Cilantro (for topping)
Directions
  1. Preheat the oven to 400°F (200°C).
  2. Preheat a cast-iron skillet over medium heat.
  3. Cook the bacon for 3-4 mins. Remove from the pan.
  4. Cook your veggies: add in the diced onion, and jalapeño peppers. Cook until the onions are translucent, and the peppers are softened.
  5. Add in your chorizo and cook for 3-4 mins.
  6. Just before the chorizo is done, add the diced tomatoes. Cook for another 2-3 mins, until tomatoes have softened. Season with a pinch of salt and pepper.
  7. Dab excess grease with a paper towel.
  8. Remove half of the mixture and set it aside. Add in half your bacon.
  9. Spread the shredded Oaxaca evenly over the chorizo and bacon mixture in the skillet. Then top with the leftover chorizo mixture & bacon.
  10. Place the skillet in the oven and bake for 10-12 minutes, or until the cheese is fully melted and bubbly.
  11. Carefully remove from the oven, top with some cilantro, and serve hot with warm tortillas on the side. Enjoy babe!
