Chewy and sweet with just the right amount of salt. These Date Caramels are loaded with fiber, omega 3s, and other nutrients and yet have an authentic caramel flavor and texture. Ingredients

raw walnuts

medjool dates, pitted

1 teaspoon
vanilla powder or extract

flaky salt
Directions

Place the walnuts into a food processor bowl fitted with the "S" blade. Blend into a thick, crumbly paste.

Add the pitted medjool dates and vanilla and blend again until the ingredients come together, creating a shiny and smooth dough.

Scoop the caramel dough into a silicone mold tray (1 inch square candy molds works well). Use a spatula to smooth the top of the caramels and sprinkle with flaky salt. NOTE: If you do not have a silicone mold tray, scoop the caramel batter onto a piece of parchment paper and form into a 1 inch thick square; transfer to an airtight glass container.

Freeze for at least 1 hour.

Pop the date caramels out of the mold tray (or cut into squares). Enjoy immediately or transfer date caramels to an airtight glass container and store in the freezer for up to 3 months.
