These nacho fries are the perfect indulgent appetizer for a family dinner or as a game day dish with friends, and SER!OUS Bean Co makes it easy to add the right amounts flavor and spice with their Jalapeño Bacon Pinto Beans. Ingredients
  • 1 pound frozen crinkle cut french fries (regular or sweet potato)
  • 2 cups SERIOUS Bean Co Jalapeño & Bacon Pinto Beans
  • 1/2 medium onion finely diced
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1/2 tablespoon taco seasoning (for fries)
  • 1 green onion, chopped
  • sour cream, salsa for garnish
  • guacamole for garnish
Directions
  1. Preheat oven to 450 degrees and spray a baking sheet with non stick spray. Toss fries with taco seasoning lay fries in a flat layer on the baking sheet, leaving space around each fry to ensure even cooking throughout. (You can also use the air fryer if you prefer)
  2. Bake fries for 15-20 minutes, mixing around once, until crispy they are.
  3. Meanwhile cook the onion and peppers in a skillet with oil on the stove top over medium-high heat until browned. Add in the SERIOUS Bean Co Jalapeño & Bacon Pinto Beans and cook for 2-3 more minutes. Stir in taco seasoning if desired and set aside.
  4. When fries are crispy, top with some of the cheese, then bean mixture, and more cheese if desired. Bake until cheese is melted, about 5 minutes.
  5. Top with generous servings of sour cream, salsa, and guacamole or add them to the side for dipping. Enjoy!
