### Lentil Stew
**Ingredients** (Serves 2):
- Lentils: 1 cup
- Potatoes: 2
- Carrot: 1 large
- Tomatoes: 2 medium
- Onion: 1
- Garlic (minced): 1 tablespoon
- Salt and pepper: as needed
- Lemon: 1 (for seasoning)
**Instructions**:
1. Wash the lentils thoroughly and cook them. In a separate pot, peel the potatoes and carrot, and cook them with a bit of water. Alternatively, you can microwave the potatoes and carrot for about 5 minutes if you prefer.
2. Once the lentils are fully cooked, set them aside. Blend the cooked potatoes, carrot, a small amount of lentil water, and the two tomatoes until smooth, then set the mixture aside.
3. Dice the onion finely and fry it in a pan with some olive oil until golden brown. Add the minced garlic to the fried onions and stir briefly. Then, season the mixture with salt and pepper.
4. Add the blended vegetables and tomato mixture to the pan and sauté them with the onions and garlic for around 5-10 minutes, depending on your desired thickness.
5. Finally, add the lentils and their water to the pan, stirring well. Continue cooking until the stew thickens and the flavors blend together.
