We're looking ahead to the holiday this year, because to us, cabbage is the unsung sibling in the family of brassica—one of the most welcoming and versatile green things out there.

Cabbage is cooked in so many different cultures and countries, and no wonder: It's hardy and you can prepare it just about any way—braise it, stir fry it, put it in soup, bake it, or eat it raw, among other things. So here are 4 ways—and 12 recipes—to really look forward to ringing in New Year's Day with (or really, any day before or after then, too):

Thanks for these great recipes! Some of them I have already tagged and/or tried, but most got past me. Getting ready to make Madhur Jaffrey's Stir-Fried Cabbage tonight for a much needed meatless meal (a fried egg on top doesn't count!).
