I love roast chicken! I typically go for smashed baby red potatoes and either balsamic green beans or brussel sprouts. YUM YUM YUM!

Brussel sprouts - pan seared in bacon fat and garlic and then pour in a little chicken stock to scrape up those brown bits and put a lid on it to finish steaming the sprouts. Top with crumbled bacon and a balsamic reduction! Best brussel sprouts EVER.

We love spinach sauteed in olive oil and garlic with a squeeze of lemon and mashed potatoes with a pan sauce made from the chicken drippings.

My go to side is perfect roasted potatoes. I found the recipe on Chocolate & Zucchini years ago and have been making them ever since! Merril's carrots cooked forever or Molly's skillet carrots with thyme are also a winner!

My go-to side with roast chicken is usually roast potatoes and roast vegetables. I guess I dig the roasting theme!
