Beer Substitute for Borrachos

I'm making Borrachos for dinner, but need a non-alcoholic substitute for the beer.
Would coffee work?

I think I would use (unsalted) chicken stock. Or non alcoholic beer. Coffee is going to change the flavor profile radically. Although it might be good.
