I am looking for a rich desert I can serve a diabetic. Any ideas

Maybe a really dark chocolate mousse? V dark chocolate, egg and cream, with a bit of flavouring if you fancied? (I like to make choc mousse with greens and blacks maya gold) It would be very rich, so you'd only need/want a little... You could serve it in espresso cups so there wasn't the temptation to offer/serve more than one helping!

Maybe a cheese course with a little fruit? with nuts and some extra-extra-dark chocolate? or just a small amount of something else? You could make a fruit crumble maybe and use very little sugar in the topping-- you could use mostly oats and nuts and some butter and spices in the topping so that it's not extra high in sugar (the fruit of course has some, but the fiber will offset it a bit . . .)

I have two friends that are diabetic and I made this for them one time, the crepes contain no sugar and the fool can be sweetened with splenda, you don't have to make a coulis.
