I need a healthy, low-fat pancake recipe. That doesn't taste like cardboard. Any ideas?

I usually leave the oil/butter out of pancake batter, although I do use eggs.

I have used yogurt instead of buttermilk, added blueberries, etc. and they always turn out great. Even my husband loves.
