I've made them a day ahead and kept at room temperature with no problem, but a pro can comment better on the likely shelf life. On an earlier try, though, I learned my lesson NOT to refrigerate them, as when I brought them out later, the cold chocolate attracted condensation. Freezing will not work: strawberries will become mushy.
You can make them one day ahead. If you can store them somewhere between room temp and fridge is best. I like the basement.
Chocolate covered pineapple slices last well also. Bananas have to be served right away.
