Urgent! ASAP! Can I rehydrate coconut powder to make coconut milk?

Yes. Issue would only be that you won't know the exact moisture content of the coconut milk required for the recipe. I would stick to a brand specified, or sub a preservative free can

Yeah, go for it. go easy on the water at first and add gradually so you still have some body. If you're making a curry of some sort, they're generally very forgiving...
