Spearmint FTW! Peppermint, aka mint, is good for use with chocolate, but nothing much else.
Spearmint is the mint I'm most likely to find at the market, so I go with that. But I always give it a good sniff and taste first because its quality and intensity can vary so much and influence how much I use in any given recipe. It would be fun to try this with different mints, like pineapple mint or orange mint. I think I have a kitchen experiment to look forward to this spring!
