added about 1 year agoI suspect she means gorgonzola dolce which is sweeter and typically creamier than "regular" gorgonzola.
Gorgonzola dolci, is one way to go. But I suspect that depends on whether you're using this as an appetizer or main course. That maple syrup component as well as the sweetness of the pear would benefit from a sharper, more distinct edge on the gorgonzola. Alongside a bitter salad (as pictured) would make this a great flavor balance
