What do you suggest for 'tomato Sauce" ?
I would actually make a really simple one for this using san marzano, crushed tomatoes and sauteed onions and garlic. I think using a canned variety, with everything they usually contain, would mask the nuance of this dish.
I used regular, store-bought passata - plain, sieved tomatoes when I made this
