Regional dish of Southern Arkansas?

When I travel, I like to check out the local cuisine of wherever I happen to be. Is there anything I should try while I'm in southern Arkansas (practically northern Louisiana) on business?

Catfish, mud bugs. Fried chicken. Go to a roadside cafe/diner instead of a "restaurant" and get something authentic.
