If you cut and peel them tonight they must be stored in water otherwise they will discolor. Just drain them thoroughly before you roast them. Ideally you should prep them just before using. Hope this helps
I wouldn't even worry about soaking them in water, especially if you are using a waxy potatoe. You are roasting them anyways, so they will naturally get brown on the outside and disguise any minimal discoloration.
