What is banyuls vinegar and how does it taste compared to other vinegars?

It's an aged vinegar made with sweet wine from the Grenache grape and produced in Banyuls-sur-mer in southern France. I suspect you could substitute a sherry vinegar if you can't find the Banyuls version.
