I have a question about the ingredient "sherry vinegar" on the recipe "French Onion Tart" from Jennifer Perillo. can you use a different vinegar- ie tarragon or champagne vinegar?

Yes, definitely, although sherry is generally stronger, so add to taste (before adding the egg!).
