You could certainly add turkey to your vegetable stock. I would recommend saving the meat for leftovers and adding the bones/carcass to your stock.

Turkey legs are good and if you have the giblets and neck from your whole turkey; add them too

Or try turkey wings - they are relatively inexpensive and have lots of collagen, so the stock will have great body.
