Can I brine pork chops for less than 8 hours?

Only have 5 hours! They are center cut 1" thick

Yes, five hours is fine. It partly depends on the recipe, but less time will usually work too. How are you cooking them?

Since pork can dry out so quickly, it helps if when you finish them in the oven there is some type of liquid in the pan to create steam/moisture in the oven (broth, water, moisture from apples or vegetables, etc.). Sounds like a nice dinner!
