can I subsitute quark for mascarpone in the Food52 Nectarine Slump? Perhaps add a little sugar or vanilla to cut the sourness?

When I made it a couple of weeks ago, I didn't have mascarpone and I substituted a combo of about 1/2 cup farmers cheese (which would be like quark), 1/4 cup heavy cream, and 1/4 cup French feta. Worked beautifully and didn't need any extra sugar. Hope this is helpful.
