Nutcakes' hash is a good call. I would also be thinking about a simple turkey pot pie which you could assemble using frozen puff pastry crusts (also exploiting your left over vegetables.

How about an open-faced turkey sandwich w/ a fried egg on it, cheese & some of your veggies. If you have leftover mashed potatoes, fry them up in a skillet w/ butter and onions on the side. I also like reheating the stuffing in the oven and then cracking some eggs on top to finish it off.

You can make hash. Fry ad onion add cubed potato or sweet potato, stuffing and chopped turkey. Fry or poach eggs to serve with it. Gravy and cranberries on the side.

If you have leftover mashed potatoes, make them into cakes and fry them in a combo of oil and butter. Make frittata with the leftover vegetables.
