cornbread

I have a pan of the Huckleberry cookbook's cornbread left over from last night. What should I make tonight to serve with it?

I like to serve cornbread with a soup of puréed greens, like spinach or chard.

I'd cook up a big pot of collards with ham hocks. Or, since it's Monday, go traditional New Orleans and make red beans and rice!

American chilli (with or without beans)
Use the cornbread as a base (instead of bread dough) for a sort-of pizza dish
Sautéed mushrooms
Anything you'd serve over polenta
