Doubling the recipe to feed a larger crowd

Wondering if I doubled the recipe with a larger cut of meat, how long should it be in the oven for?

For ease of handling and even cooking, I'd opt for two smaller cuts rather than a large one. I've made a turketta and it was a handful. Imagine that rolling and tying anything bigger would be a hassle.

I don't think so but I would make sure there's plenty of space between them for even browning and rotate the pan half way through. Use a thermometer to make sure it's done.
