Recommendations for a PIE cookbook.

I make a very good pie crust. Fillings? Not so much. I just retired and want to learn to make perfect pies every time. Not just good pies. I am considering - Amazing pies. The Pie and Pastry Bible, The Artful Pie, The New Pie, Southern Baked: Celebrating Life with Pie, Sister Pie, The Perfect Pie, Art of the Pie. Anyone have any knowledge on this?

Art of the Pie by Kate McDermott. Beautifully photographed and useful, practical information. I keep it on my coffee table!

My favorite pie book is The Hoosier Mama Book of Pie! I love to make sweet and savory fillings and this one has a lot. I recommend checking out your local library for the different books before purchasing one - it’s usually what I do before buying a cookbook. Happy pie baking!

Thank you for the recommendation. I have many of the other recommendations as part of my personal collection. I, too, use the library to review new cookbooks, baking books and ethnic cookbooks before purchasing. The library and sites such as Food 52 - such wonderful resources.

Carole Walter's "Great Pies and Tarts" is full of great tips, techniques, and detailed explanations. I have Rose Levy Beranbaum's "Cake Bible" and consider it the best cake cookbook ever written, so you would probably do very well with her "Pie and Pastry Bible."

I read the article on Food52 https://food52.com/blog/16137-the-books-that-help-you-bake-better-pies. It helped but I also wanted everyone's personal thoughts.

I like the Art of the Pie and the Pie and Pastry Bible. I took Sister Pie to Half Price Books. :)

I have Four and Twenty Blackbirds, which I think is the bakery that trained the people from Sister Pie, and I like Four and Twenty Blackbirds a lot. Other Food52 baking club members seemed to enjoy Sister Pie too. There was another pie book they did, which I'm bummed I didn't participate in, called Pie Squared. It was a sheet pan pie book, but it had a variety of crusts, interesting sweet and savory fillings, and I think the recipes could be halved to fit a standard pan. Hope this helps!
